Spaghetti with Lemon Sauce

Steps

Place a pot with a large amount of water for cooking pasta on the stove. Just before the water boils, add salt to increase the boiling intensity.

While waiting for the water to boil, wash the lemon and dry it thoroughly with paper towels. Using a vegetable peeler, cut two long strips of the peel and slice them into ribbons. Finely grate the remaining peel. Cut the fruit in half and squeeze about 30 milliliters of juice from both halves, straining it through a fine sieve.

Add the spaghetti to the boiling water and cook for about 2 minutes less than the time indicated on the package. Stir the pasta frequently during cooking to prevent it from sticking together.

Pour cream into a deep pan and add the finely grated lemon zest. Heat it slowly over moderate heat while stirring until it comes to a boil. Then reduce the heat to low and gradually whisk in the butter, one tablespoon at a time. Once all the butter is incorporated and you have a shiny, buttery sauce, remove the pan from the heat.

Just before draining the spaghetti, reserve 360 ml of the cooking liquid. Pour about 3/4 of this liquid into the pan with the sauce and return it to the stove. Add the drained spaghetti to the sauce and cook for another 2 minutes. Shake the pan frequently and gradually add grated Parmesan cheese. The cheese should melt completely, and the sauce should become creamy. If the sauce thickens too much, add a few more tablespoons of the reserved liquid. Finally, stir in the lemon juice and the sliced lemon zest, and season the dish with salt and pepper to taste.

Serve the prepared spaghetti on plates. You can grate a bit more Parmesan on top and add chopped basil if desired.
