Spaghetti with Roasted Pumpkin, Spinach, and Walnuts

Preheat the oven to 220 degrees Celsius, line a baking tray with baking paper. Wash and clean the pumpkin. Cut it into bite-sized pieces, place them on the tray, drizzle with olive oil, and season with salt and freshly ground pepper. Mix well so that the oil and spices are evenly distributed, then arrange the pieces in a single layer on the tray and place it in the preheated oven for 40 to 50 minutes. The pumpkin is done when the pieces soften and turn nicely brown on top.

About 15 minutes before the pumpkin is done, place a pot with a large amount of water for cooking pasta on the stove. Just before the water boils, add salt to increase the boiling power. Add the spaghetti to the boiling water and cook for one minute less than indicated on the package.

Clean, wash, and thoroughly dry the spinach. Peel and finely chop the garlic. Heat oil in a pan and quickly sauté the garlic. Add the chili and cook the mixture over moderate heat for another 1 to 2 minutes (be careful not to burn the garlic!).

Mash half of the roasted pumpkin pieces well with a fork. Add them along with the whole pieces to the pan, along with the drained pasta and spinach. If desired, add a few tablespoons of the pasta cooking water. Mix everything well and cook until the spinach leaves wilt and soften. Season with salt and pepper to taste, and optionally add a bit of lemon juice.

Serve the pasta on plates and sprinkle with ground walnuts. Serve the dish immediately.
