Spanakopita (Greek Spinach Pie)

Preheat the oven to 180 degrees Celsius. If necessary, squeeze out the thawed spinach. Clean the spring onion, wash it, and chop it finely. Also finely chop the dill.

In a bowl, first mix the cottage cheese, crumbled feta, and eggs. Add the squeezed thawed spinach, chopped spring onion, and dill. Season the mixture to taste with salt and ground pepper.

In a small pot, slowly melt the butter over low heat and mix it with olive oil. Grease the bottom and sides of a rectangular baking dish (approximately 30 x 20 centimeters) well with the fat. Unroll the phyllo dough and cut the sheets in half to fit the size of the baking dish.

Cover the bottom of the baking dish with the first sheet of dough, brush it with the butter and oil mixture, and cover it with the second sheet of dough. Repeat the process until you have layered half of the dough sheets in the baking dish. It is important to grease each sheet of dough.

Spread the spinach filling over the dough and distribute it evenly over the entire surface. Cover the filling with the remaining sheets of dough. Brush each sheet of dough with the butter and oil mixture.

Before baking, cut the pie into eight pieces with a sharp knife. Finally, pour the remaining fat over the top and sprinkle with sesame seeds.

Bake the pie in the preheated oven for 45 to 60 minutes, or until it turns golden brown and crispy on top.
