Ingredients
Caramel

150 g Sugar, white

375 ml Milk, whole milk

First, prepare the caramel. In a pan (or saucepan) with a thick bottom, add sugar and water, place it on the stove, and slowly heat the mixture over moderate heat until you get a light brown mixture. Pour this into a small rectangular baking dish (like one used for banana bread or similar baked goods). Let the caramel cool.

Pour milk into the saucepan. Split the vanilla bean lengthwise and scrape out the seeds with the tip of a knife, adding both the seeds and the pod to the milk. Once the milk comes to a boil, stir in the condensed milk and sugar, remove the saucepan from the heat, and let the milk mixture cool to room temperature. Remove the vanilla bean pod.

Crack the eggs into a bowl and whisk them thoroughly with a hand whisk. Mix in the cooled milk mixture, then pour the mixture through a fine sieve into the baking dish with the caramel.

Seal the baking dish tightly with aluminum foil and place it in a larger baking dish. Pour enough hot water into the larger dish so that it reaches 2 to 3 cm high. Carefully place both dishes in the oven preheated to 170 degrees Celsius. Bake the flan for 50 minutes, then let it cool completely before serving.

Before serving, run a sharp knife around the edges of the custard to separate it from the sides of the dish. Place the dish in hot water for a minute to melt the caramel bottom. Invert the dish onto a plate, slice into portions, and serve.
