Spanish Rice with Green Chili
Carefully prepared rice with spicy additions can be a tasty side dish. If you increase the quantity, it can also become an excellent standalone meal.

185 g Rice, white, short grain

1 piece Onion, raw

1 piece Bell pepper, green, fresh

1 piece Chili peppers, green chili, fresh

2.5 dl Water

1 can Tomato, pieces - can

1 pinch Spices, chili powder

3 pinch Salt, table

2 spoons Oil, olive
Steps

Before cooking, rinse the rice. Place it in a colander and rinse under water until the water runs clear. Once the water is clear, drain the rice well. Wash the bell pepper, clean it, remove the seeds, and chop it very finely. Place the peeled tomatoes in a bowl and blend them into a smooth sauce using a hand blender. Wash the chili and chop it finely. Peel the onion, wash it, and chop it.

Heat olive oil in a deep pan. Add the rice, onion, and bell pepper. Fry everything together, stirring constantly, until the rice browns and the onion is nicely caramelized. Add water and the tomato sauce. Season with ground chili and salt, stir, and cook covered over moderate heat for 30 minutes. Stir occasionally to prevent the rice from sticking to the bottom.

Serve the rice while still warm. Sprinkle chopped green chili on top.
