Spätzle
Spätzle is most often served as a soup addition, but it can also be prepared as a standalone (appetizer) dish or offered as a side dish with meat in sauce.

Ingredients

320 g Wheat flour, white, multi-purpose

2 piece Egg, fresh

160 ml Milk, whole milk

Sift the flour into a bowl. Make a well in the center and add the eggs, salt, and milk. Mix the ingredients well, then beat them with a whisk to form a thick but still liquid dough that should be completely smooth and free of lumps.

Meanwhile, bring water to a boil in a pot and lightly salt it. Spätzle can be prepared in two ways: First method: Transfer the dough to a board with a handle. Dip a knife into the salted water, which should barely simmer, and use the back of the knife to cut thin noodles, adding them directly to the pot. Separate them from the bottom of the pot with a whisk, and repeat the process until all the dough is used. The spätzle should cook for 3-4 minutes. Second method: Place a colander with larger holes (a spätzle maker) over the boiling water. Add a portion of the dough and slowly press it through the colander into the water using a scraper. The spätzle should cook for 3-4 minutes.

When the spätzle float to the surface, drain them, rinse with cold water to prevent sticking, and drain well again.
