Spiced Oatmeal Cookies
If you enjoy spices, you will definitely love these cookies. If you like holiday spices, even more so. We’ve added all the traditional Christmas spices: cinnamon, vanilla, nutmeg, allspice, cloves, and ginger. They are excellent to enjoy as a snack, and for an even greater treat, you can pair them with a glass of warm or cold milk.

Ingredients

150 g Wheat flour, white, multi-purpose

2 teaspoons Spices, cinnamon, ground

230 g Butter, unsalted

1 teaspoon Vanilla, extract, imitation

100 g Sugar, white

120 g Sugar, brown

2 piece Egg, fresh

270 g Oat bran, raw

In a bowl, sift the flour, baking powder, spices, and salt, and mix the ingredients together.

In another bowl, use an electric mixer to cream the softened butter. Add the vanilla extract and both types of sugar. Mix until you get a slightly buttery mixture, then gradually add the eggs one by one. Reduce the mixer speed and slowly mix in the dry ingredients. Finally, fold in the oatmeal with a spatula. The dough can be used immediately or covered and stored in the refrigerator.

Preheat the oven to 190 degrees Celsius. Line a low baking sheet with parchment paper. Using a spoon, place dollops of dough (about 2 tablespoons per dollop) onto the sheet. Make sure there is 5 cm of space between each dollop, as the cookies will spread during baking. Bake in the preheated oven on the middle rack for 10 to 12 minutes. They are done when the edges are nicely browned, but the centers are still soft.

Remove the baking sheet from the oven and transfer the cookies to a wire rack. Let them cool completely before serving.
