Spicy Chocolate Sandwiches

Ingredients

500 g chocolate, dark

300 ml Sweet cream

pieces Chili peppers, red chili, dried

50 g Butter, unsalted

30 g Honey

Pour cream into a cup. Add chili and slowly heat until the cream boils. Once the cream boils, remove the cup from the heat.

Place 200g of chocolate in a bowl. Add room temperature butter cut into pieces and honey. Strain the cream, then pour it into the bowl with the butter and chocolate. Mix well to create a smooth chocolate mixture. Cover the bowl and store it in the refrigerator until ready to use.

Melt 300g of chocolate in the microwave or over a double boiler. Pour the melted chocolate onto acetate foil. Use a pastry spatula to spread it into a thin layer on the foil.

Remove all seeds from the chili, then finely chop it. Sprinkle the chopped chili over half of the chocolate sheet. Store in the refrigerator to allow the chocolate to slightly harden.

Once the chocolate has slightly hardened, use a sharp knife to score a grid of equally sized rectangles into the chocolate sheet. Fill a piping bag with the cooled chocolate mixture. Pipe the mixture onto half of the rectangles, then return the chocolate sheet to the refrigerator until the chocolate is completely set.

Carefully separate the set chocolate rectangles from the base. Now it's time to assemble the sandwiches. Gently place the chili-topped chocolate rectangles onto the chocolate cream. Serve the prepared sandwiches on a plate or platter and enjoy.
