Spicy Pork Ribs
The ribs will be a real hit when you serve them. During the meal, they will literally "set the table on fire" due to their excellent flavor.

Steps

Quickly rinse the ribs under running water and place them in a pot. Add enough water to completely cover the ribs. Place the pot on the stove and wait for the water to boil. Reduce the heat to medium-low and cook the ribs covered for 1 hour. Drain the cooked ribs well.

Peel the garlic, rinse it, and slice it thinly. Place a pan on the stove and heat it well. Add the Sichuan peppercorns and sliced garlic to the pan. Stir-fry everything for one minute, then remove from heat. Let the peppercorns and garlic cool, then remove the garlic from the pan and set it aside on a plate.

Crush the Sichuan peppercorns in a mortar. Add coarse salt and freshly ground black pepper. In a bowl, mix a tablespoon of water with a teaspoon of starch. Add the five-spice mixture and half of the Sichuan peppercorn mixture. Mix everything very well.

Place the ribs in a larger container and pour the prepared marinade over them. Rub the marinade into the meat with your hands, then sprinkle the roasted garlic on top. Cover the container and refrigerate for 3 hours.

After three hours of marinating, take the ribs out of the refrigerator and let them come to room temperature. Remove the garlic from the ribs. Meanwhile, heat a larger amount of oil in a wok or a deep pan. When the oil is hot enough, add the ribs and fry them for 2 minutes.

Place the fried ribs on a paper towel to drain as much fat as possible. Serve the ribs on plates, optionally drizzle with soy sauce, and sprinkle with the remaining peppercorn mixture. Serve with your chosen side dish.
