Spicy Pumpkin Soup
A classic autumn dish that can be very filling and a standalone meal when paired with homemade bread.

Ingredients

2 spoons Oil, olive

1 piece Onion, raw

1 piece Pumpkin, raw

0.5 teaspoons Spices, cumin, seeds

2 teaspoons Spices, curry powder

1 l Soup base, chicken, cube

0.5 teaspoons Salt, table

1 pinch Spices, pepper, black
Steps

Peel and chop the onion, remove the seeds from the pumpkin, and cut it into smaller pieces.

Heat the oil in a pot. Add the pumpkin and onion and sauté the ingredients over moderate heat for five to eight minutes. Add cumin and sauté for another minute. Then sprinkle the vegetables with curry powder and pour in the hot broth. Cook covered over moderate heat for about 20 minutes until the pumpkin softens.

Blend the prepared soup smoothly with an immersion blender or pass it through a sieve. Then pour it back into the pot and bring it to a boil again. Season with salt and pepper to taste, and optionally add a bit of lemon juice.

Pour the soup into bowls and serve with slices of homemade bread.
