Spinach and Cottage Cheese Star
Fermented dough in sweet and savory combinations is always welcome among both young and old eaters. Today, I decided to go for a savory version with a simple filling of cottage cheese and spinach. Quick to make, tasty, and suitable for lunch or dinner with a bowl of salad, or as a treat for guests. It also works great as a snack to serve while watching a good movie or a game. No matter if its winter or summer, the spinach and cottage cheese star always fits.

Ingredients
Dough

500 g Wheat flour, white, multi-purpose

1 piece Yeast, dry

1 teaspoon Sugar, white

3 dl Water

1 teaspoon Salt, table

0.5 dl Oil, olive
Filling

500 g Spinach, raw
-
500 g Cheese, cottage cheese

Steps

Sift the flour into a bowl. Make a well in the center and crumble the yeast into it, sprinkling it with sugar. Pour a little lukewarm water into the well and wait for about 5 minutes for the yeast to activate.

Pour the remaining water into the bowl, add oil and salt, and knead into a smooth and pliable dough. Cover the bowl with the dough and let it rest until the volume of the dough doubles. This takes about half an hour.

While the dough is rising, prepare the filling. Wash the spinach and place it in a pot with a liter of boiling water. Cook for about 5 minutes until the spinach wilts and softens. Drain and let it cool.

Chop the cooled spinach and squeeze out any excess water.

In a bowl, combine the cottage cheese, egg, egg white, and salt. Add the chopped spinach and mix everything well.

Divide the risen dough into four parts. Roll each part thinly into a circle.

Place the first dough circle on baking paper and spread a third of the filling on it. Cover with the next dough circle and spread another third of the filling on it. Follow with the third dough circle, spreading the remaining filling on it. The last, fourth dough circle, is not spread with filling but simply placed on top of the last filled dough. Press lightly with your hand so that the dough layers slightly stick together.

Once all the dough circles are stacked on top of each other, take an empty round baking dish or a large plate and place it upside down on the top dough. Use a sharp knife to cut around the edge of the plate to get a nice, large circle.

Place an upside-down glass or smaller bowl in the center of the top dough and cut the dough into 16 equal-sized strips.

Take one strip of dough and twist it around its axis, then repeat with all the strips to form a star shape.

Before baking, brush the star with egg yolk mixed with milk or yogurt. Bake at 200 degrees Celsius for about 35 minutes (depending on the oven).

Advice
Instead of spinach, you can use chard or young nettles. You can also use frozen spinach and prepare it (cook it) according to the instructions beforehand. The water left from cooking the spinach can be cooled and used for watering potted plants.
