Spinach and Feta Phyllo Triangles
A quick-to-prepare snack that is perfect for parties or evening gatherings with friends. These delicious vegetable pockets also work great as a side to a bowl of salad or a large plate of creamy soup. Preparation will take you less than half an hour, and the oven will do the rest of the work.

275 g Dough, puff

150 g Spinach, raw

80 g Cheese, feta

30 g Cheese, Parmesan, grated

Steps

Preheat the oven to 200 degrees Celsius. Line a large baking tray with baking paper.

Clean and wash the spinach if necessary. Dry it thoroughly before use and chop it roughly. Peel the shallot and garlic, then finely chop them separately. Heat oil in a pan and first sauté the shallot. Add the spinach and cook until it wilts and softens. Finally, mix in the chopped garlic and cook until fragrant. Lightly season with salt, nutmeg, and ground pepper, then remove from heat.

Once the spinach has cooled to lukewarm, drain any excess liquid from the pan (you can also squeeze it out). Then mix in crumbled feta cheese and grated Parmesan.

Unroll the phyllo dough and cut it into 8 equal-sized squares. Place a spoonful of the spinach filling in the center of each square.

In a small bowl, whisk the egg and mix it with milk. Brush the edges of the squares with the egg wash, then fold them diagonally to form triangles. Press the edges firmly with your fingers or a fork to seal them, so the triangles don’t open during baking.

Arrange the phyllo triangles on the baking tray. Brush the tops with the egg wash (using a brush), then sprinkle with sesame seeds. Place the tray in the preheated oven for 20 minutes, until the dough puffs up and turns golden brown.

Remove the baked triangles from the oven. Let them cool for at least 3 minutes before serving.
