Spinach and Parmesan Omelette

Ingredients

100 g Spinach, raw

2 pinch Salt, table

2 pinch Spices, pepper, white

1 spoon Oil, olive

2 piece Egg, fresh

2 spoons Milk, whole milk

1 spoon Butter, unsalted

1 spoon Thyme, raw

1.5 spoons Cheese, Parmesan, grated

Clean the spinach, wash it, and drain it, but do not dry it. Place a pan on the stove and wait for it to heat up. Pour a little olive oil into the pan and add the spinach. Wait for it to wilt slightly, then stir it well and remove it from the heat. Season the spinach with salt and pepper to taste, then transfer it to a cutting board and chop it finely.

Crack two eggs into a bowl and beat them with a whisk until you get a uniform, frothy egg mixture. While mixing, add milk, chives, salt, and pepper.

Place a new pan on the stove and heat it well over medium heat. Melt butter in the pan. Pour the egg mixture into the pan and tilt the pan so that the egg mixture spreads evenly across the bottom. When the edges of the omelette set, lift them with a spatula to let the egg mixture flow underneath and cook. When the bottom of the omelette is cooked but the top is still soft, evenly sprinkle the omelette with Parmesan and spinach. Save a little Parmesan for garnish. Fold the omelette in half, remove the pan from the heat, and let the omelette rest in the hot pan for another minute.

Transfer the cooked omelette to a plate, sprinkle with Parmesan, and serve.
