Spinach Dumplings with Breadcrumbs
Preparing breadcrumb dumplings with spinach and Parmesan is quick and very easy. You can prepare them for lunch or dinner, and they are also excellent as a side dish for meat and fish. If you serve them as a standalone meal, accompany them with a bowl of salad.

200 g Spinach, raw

40 g Cheese, Parmesan, hard

Steps

Clean the spinach as needed, wash it, and dry it. Peel the garlic and finely chop it.

Heat a pan and grease it with a tablespoon of oil. Add the spinach and quickly sauté it until it wilts and softens. Once all the liquid released by the spinach during sautéing has evaporated, add the garlic. Lightly season with salt and freshly ground pepper, stir, and sauté for another 1-2 minutes, then remove the pan from the heat. Let the spinach cool until lukewarm.

Meanwhile, finely grate the Parmesan. Transfer the contents of the pan to an electric chopper and add two eggs. Mix well to obtain a thick spinach mixture.

Transfer the spinach mixture to a bowl. Add the grated Parmesan, breadcrumbs, and 1-2 tablespoons of sour cream. Season additionally with salt and pepper, but be cautious with the salt as Parmesan is also salty. Once you have a uniform, medium-thick mixture, stop mixing. Cover the bowl and let it rest for about 15 minutes to allow the breadcrumbs to swell.

Meanwhile, bring lightly salted water to a boil in a pot. If you want nicely shaped dumplings, form them with two spoons, or use a single spoon that has been greased or dipped in hot water. Scoop up some of the mixture and gently drop it into the lightly boiling water using the spoon. The dumpling will naturally separate from the spoon upon contact with the hot liquid. Repeat the process until you run out of mixture.

Partially cover the dumplings and cook them for 10-15 minutes until they firm up and soften. The water should not boil too vigorously while cooking the dumplings. Drain the cooked dumplings.

Melt a tablespoon of butter in a pan. Add a little oil to prevent the butter from burning. Once the fat is heated, add the cooked dumplings to the pan and quickly sauté them.

Serve the prepared dumplings on plates and optionally grate some Parmesan or another cheese on top.
