Spinach Gnocchi
Spinach gnocchi are an excellent side dish for meat dishes. If mixed with a sauce (tomato, cheese, or cream), they quickly create a wonderful meal that can be served for lunch or dinner.

Ingredients

500 g Potatoes, white

200 g Spinach, raw

160 g Wheat flour, white, multi-purpose

30 g Butter, unsalted

1 piece Egg, fresh

Peel the potatoes and wash them thoroughly under running water (scrub them if necessary). Place them in a large pot and cover with cold water so that all the potatoes are submerged. Bring the potatoes to a boil, then cook them over moderate heat for another 25 minutes.

While the potatoes are cooking, prepare the spinach. First, clean and wash the spinach. Bring water to a boil in a pot. Add the spinach to the boiling water and cook just until the leaves wilt and soften (about 2 minutes). Drain the spinach well and let it cool.

Drain the cooked potatoes and let them sit for a few minutes to steam. While still hot, peel the potatoes and mash them (using a potato masher or a ricer). Squeeze the cooled spinach well and chop it finely. Add it to the bowl with the mashed potatoes. Also add the egg, flour, butter, nutmeg, and salt to the bowl, then knead all the ingredients well to form a uniform dough that easily separates from the fingers. If the dough is too soft, add a bit more flour.

Shape the dough into a long roll with a diameter of 2 cm on a lightly floured surface. Cut it into gnocchi pieces about 1.5 to 2 cm long. Use the blunt side of a knife to help with the cutting.

Place a large pot of salted water on the stove and bring it to a boil. Add the gnocchi in batches to the boiling water. When they float to the surface, they are cooked.

Advice
Cooked gnocchi can be seasoned with melted butter or olive oil. Grated Parmesan is also a great addition. The dough can also be prepared without eggs, but in this case, a bit more flour should be used. Adding a little wheat bran to the dough makes the gnocchi more tender. Potatoes can also be steamed.
