Spinach Pie with Cottage Cheese and Feta

Ingredients
Dough

250 g Wheat flour, white, multi-purpose

40 g Cheese, Parmesan, grated

In a bowl, mix the flour, salt, and grated Parmesan. Cut the butter into cubes and sprinkle it over the ingredients in the bowl. Use your fingertips to rub the fat into the dry ingredients, lifting the mixture to make it airy and crumbly. Add the egg yolk and a few tablespoons of cold water, then quickly knead the ingredients into a dough. Wrap the dough in plastic wrap and refrigerate for one hour.

Roll out the dough on a lightly floured surface into a thin circle. Place it in a round pie dish (25 cm in diameter). Gently press it against the bottom and sides of the dish, prick the bottom with a fork in several places, and freeze for 15 minutes. Meanwhile, preheat the oven to 190°C (375°F).

Clean, wash, and dry the spinach. Peel and finely chop the garlic. Heat oil in a pan, add the spinach and chopped garlic, and quickly sauté until the spinach wilts and softens. Let the sautéed spinach cool, then roughly chop it and mix it with cottage cheese, eggs, and cream. Season the mixture to taste with ground nutmeg, pepper, and salt.

Line the chilled dough with parchment paper and spread baking beads (or dried beans) over it. Bake the dough base in the preheated oven for 20 minutes, then remove the beads and parchment paper. Brush the dough with egg white and bake in the preheated oven for another 10 minutes, until it is partially baked and golden brown.

Remove the partially baked dough base from the oven and fill it with the prepared filling. Crumble feta cheese on top. Bake the pie in the preheated oven for another 35 to 45 minutes. If the dough browns too quickly, cover the pie with a piece of aluminum foil or parchment paper.

Let the baked pie cool slightly, then cut it into pieces of your desired size and serve. A salad pairs excellently with it.
