Spinach Pockets
Delicious pockets with a tasty vegetable filling are sure to be a hit at any party. For a nicer appearance, decorate them with seeds before baking: flax, sesame, sunflower, or pumpkin seeds.

Ingredients

500 g Dough, puff

2.5 spoons Oil, olive

350 g Spinach, raw

3 pods Garlic, fresh

Clean the spinach, wash it, and dry it well. Then roughly chop the leaves. Peel the garlic and finely chop it. Pour oil into a larger pan, add the spinach, mix well, and cover the pan. Let the spinach simmer on low heat for 2 minutes to soften. Then uncover the pan and mix in the chopped garlic. Wait for the water to evaporate and the garlic to become fragrant, then remove the pan from the heat. Mix the egg, pine nuts, and grated Parmesan into the warm spinach. Season with pepper and salt to taste.

Preheat the oven to 180 degrees Celsius, and line a low baking tray with parchment paper. In a small bowl, beat the egg and mix it with milk. Roll out the thawed puff pastry on a lightly floured work surface to about 3 mm thick and cut it into 10 cm squares. Brush the edges of the squares with the beaten egg, and place a spoonful of spinach filling in the center. Fold the squares diagonally to form triangular pockets. Press the edges together with a fork, and brush the tops of the pockets with the beaten egg.

Transfer the prepared pockets to the baking tray and bake in the preheated oven for 20 to 25 minutes. The pockets are done when they turn golden brown on top.

Advice
The easiest way to thaw puff pastry is to leave it wrapped in the refrigerator overnight. If thats not possible, place the sheets of puff pastry on a plate side by side and let them thaw at room temperature for 30–60 minutes.
