Spinach Roll with Creamy Filling
Spinach roll with creamy filling can be a standalone meal, and when sliced, it also makes a great snack.

Ingredients

500 g Spinach, raw

Steps

Clean the spinach leaves, wash them, and dry them thoroughly. Melt butter in a large pan. Add the spinach and quickly sauté it on high heat until it wilts and softens. Remove the pan from the heat and let the spinach cool.

Preheat the oven to 200 degrees Celsius. Blend the sautéed spinach in a food processor until smooth. Add egg yolks, salt, and pepper, and mix everything well to create a uniform and smooth spinach mixture. Transfer the mixture to a large bowl.

Beat the egg whites until stiff peaks form. First, fold in 1/3 of the beaten egg whites into the spinach mixture, then gently fold in the remaining egg whites. Mix gently and slowly, preferably with a hand whisk or spatula.

Line a low baking tray (25 x 35 cm) with parchment paper and grease it with butter. Pour the spinach mixture onto the tray and spread it evenly with a spatula. Place the tray in the preheated oven for 10 minutes.

Remove the baked spinach sponge from the oven and cover it with a damp cloth. Let it cool slightly. Meanwhile, prepare the filling. In a bowl, mix cream cheese and sour cream. Season the mixture with salt and freshly ground pepper to taste.

While the sponge is still warm, remove the cloth and parchment paper. Place the sponge on a suitably sized piece of aluminum foil. Spread 2/3 of the filling evenly over it (reserve the rest in the refrigerator) and carefully roll it into a log. Wrap it in the foil and place it in the refrigerator to cool thoroughly.

Take the reserved filling from the refrigerator. Mix it well and fill a piping bag. Remove the roll from the refrigerator, unwrap it, and trim the ends. Place it on a serving platter and decorate the top with the reserved filling (use a star-shaped nozzle). Optionally, garnish the roll with caviar, slice it, and serve.

Advice
The roll can be enhanced with the addition of smoked salmon or trout. You can also add a bit of cottage cheese to the filling if desired.
