Spinach Salad with Mandarin Oranges

Ingredients

230 g Spinach, raw

300 g Tangerine

1 handful Nuts, Indian, roasted, unsalted

100 g Grapes, red and yellow, fresh

1 spoon Sesame seeds, roasted

2 spoons Soy sauce, shoyu

30 ml Juice, orange

1 spoon Oil, plant, coconut
Steps

Wash the spinach leaves thoroughly in cold water and drain them. Remove the tough stems if desired. Peel the mandarin oranges and separate them into segments. Remove the membrane from the segments. Wash the grapes and halve the larger ones.

Heat the oil in a wok. Add the spinach and mandarin oranges and quickly stir-fry them (no more than 2 minutes). Transfer the spinach and mandarin oranges to a large bowl, then heat the soy sauce and orange juice in the wok. Remove the wok with the sauce from the heat.

Add the grapes, sesame seeds, and cashews to the bowl with the spinach and mandarin oranges. Toss the salad well and drizzle with the orange sauce. Serve the salad in four bowls and enjoy.
