Ingredients

2 spoons Oil, olive

1 piece Onion, raw

2 pod Garlic, fresh

1 l Soup base, chicken, cube

75 g Meat, pork, smoked bacon

600 g Spinach, raw

1 spoon Juice, lemon

0.5 teaspoons Salt, table

2 pinch Spices, pepper, black

Clean the spinach and wash it thoroughly. Peel the onion and garlic and chop them finely. Sauté them in a large pot where you have previously heated olive oil. The sautéing should last for five minutes, then pour in the broth. Bring everything to a boil and cook on moderate heat for 15 minutes.

Meanwhile, crisp the bacon in a Teflon pan. Transfer the cooked bacon to paper towels to drain the excess fat.

Add the spinach to the pot and cook it until it wilts and softens. Season the soup to taste with pepper, salt, and lemon juice.

Blend the soup smoothly with an immersion blender. Pour it into bowls and garnish with crispy bacon. Serve the prepared soup.

Advice
If you dont use bacon, you get a vegetarian-friendly dish. You can add a spoonful of sour cream to the spinach soup. Do not prepare the soup too far in advance, although it will still taste great, its beautiful bright green color will fade.
