Spinach Soup with Ham Dumplings
To ensure that even your children will enthusiastically eat spinach soup, very tasty ham dumplings are added, which are so tender that they melt in your mouth. You can enjoy this soup in all seasons, for lunch or dinner, and it is also suitable as a standalone evening meal.

Ingredients

1 l Soup base, chicken, cube

2 pod Garlic, fresh

300 g Spinach, raw

200 ml Sweet cream
Steps

In a pot, melt the butter and lightly toast the flour in it, stirring constantly for 1 to 2 minutes. Add the broth and mix well to avoid lumps. Bring the base to a boil.

Peel and finely chop the garlic. Add it along with the thawed spinach to the pot with the boiling broth. Let it simmer gently for 10 minutes, then stir in the cream and bring the soup to a boil again. Season with salt and pepper to taste, and optionally add a bit of ground nutmeg.

While the soup is cooking, prepare the dumpling mixture. Finely grind or chop the ham and mix it with breadcrumbs, egg, Parmesan, softened butter, and flour. Season with pepper and salt, then form walnut-sized balls with wet hands and cook them in salted boiling water for 5 minutes.

Blend the spinach soup smoothly with an immersion blender and serve in soup bowls or deep plates. Add the cooked dumplings and serve the prepared soup.
