Spinach Spaetzle with Cream and Ham
Spaetzle are very simple pasta, highly suitable for a quick lunch or dinner during the week. They are excellent as a side dish or soup addition, but this time we present a recipe for a delicious main course - spinach spaetzle in a creamy sauce with ham. The preparation is very quick, and when serving the dish, do not forget the grated cheese, which is almost an indispensable addition to the tasty spaetzle.

Ingredients

40 g Butter, unsalted

120 g Meat, pork, smoked ham

200 ml Sweet cream

60 g Sour cream

200 g Spinach, raw

3 pieces Egg, fresh

100 ml Milk, whole milk

2 pinch Salt, table

1 pinch Spices, mace, ground

250 g Wheat flour, white, multi-purpose

Clean the spinach leaves, wash them, and quickly blanch them in boiling water. Drain the blanched leaves well and let them cool. Cut the ham into small pieces.

Squeeze the cooled spinach leaves well with your hands to remove as much liquid as possible. Finely chop the drained leaves and place them in an electric chopper. Add eggs and seasonings, pour in milk, and blend everything until smooth. Transfer the mixture to a bowl and mix it smoothly with flour. If the dough is too thick, add a little more milk (water), and if it is too wet, add a bit more flour. The dough should be slightly liquid.

Place a pot with a larger amount of salted water on the stove. Pour the dough into a larger plastic bag. When the water in the pot boils, cut a corner of the bag so that the dough slowly flows into the boiling water (you can also squeeze it into the water). Cook the spaetzle for a minute or two, or just until they float to the surface. When cooked, remove them from the pot with a slotted spoon.

Melt butter in a pan and quickly sauté the diced ham. Pour in sweet cream and add sour cream. Mix well, season with pepper and salt, and bring the sauce to a boil. Remove the pan from the heat and mix the cooked spaetzle into the sauce. Serve the dish on plates and enjoy.

Advice
The thick liquid dough must be stirred until bubbles start to form. Instead of ham, you can use pancetta or bacon. Spaetzle are traditionally prepared by pouring the dough through a special colander into boiling water.
