Spinach-Stuffed Chicken Breasts

Ingredients

0.5 teaspoons Spices, nutmeg, ground

125 g Spinach, raw

1 pinch Salt, table

200 g Cheese, cottage cheese

150 ml Soup base, chicken, cube

Thoroughly wash the chicken breasts and use a sharp knife to make a lengthwise incision to create a pocket. Peel the onion and slice it thinly. Wash the spinach leaves and tear them into smaller pieces.

Place a pan on the stove and heat exactly one tablespoon of oil. Add the onion and sauté for about 3 minutes over medium heat. Then add the nutmeg and spinach leaves, and cook for an additional 4 minutes until the spinach softens and the moisture evaporates. Season with salt and pepper to taste.

Transfer the spinach to a separate bowl, add the cottage cheese, and mix well. Stuff the chicken breasts with the prepared mixture and secure the edges with toothpicks. Preheat the oven to 200°C.

Place a new pan on the stove and heat the remaining oil. Place the chicken breasts in the oil and sear for about 3 minutes on each side until golden brown. Then transfer them to an ovenproof dish, pour in the chicken broth, and bake for 30 minutes until the meat is fully cooked. Season with additional salt and pepper to taste. Serve the baked chicken breasts on a plate with your chosen side dish.
