Spring Bowl with Asparagus
A meatless meal that you must include in your spring menu, as it is full of delicious and healthy ingredients. It is filling yet refreshing, thanks to the excellent dressing.

Ingredients
Dressing

1 pod Garlic, fresh

1 piece Lemon, fresh, without shell

1 spoon Vinegar, apple

1 teaspoon Honey

6 spoon Oil, olive

100 g Cheese, feta

pieces Salt, table

250 g Couscous, dry

1 handful Walnuts

500 g Asparagus, fresh

2 pod Garlic, fresh

2 spoons Butter, unsalted

2 piece Onion, raw

1 handful Thyme, raw

1 can Chickpea, cooked

Steps

Cook the couscous according to the instructions on the package.

Roughly chop the walnuts and dry roast them in a pan. Roast them for about 2 minutes until fragrant, stirring occasionally. Transfer the roasted walnuts to a bowl.

Add butter and crushed garlic cloves to the pan. Add the asparagus and sauté for about 5 minutes, seasoning with salt to taste.

Finely chop the onion, chop the herbs, and drain and rinse the chickpeas under running water.

For the dressing, finely chop the garlic clove and mix it with grated lemon zest, lemon juice, vinegar, honey, salt, and pepper. While mixing, drizzle in the olive oil, and finally crumble in the feta cheese.

Assemble the bowls by mixing the couscous, onion, herbs, chickpeas, and half of the dressing. Divide the mixture into four bowls or deep plates, sprinkle the walnuts on top, drizzle with the remaining dressing, and place the asparagus on the side.
