Steps

Clean the leeks and slice them into rings, then add them to a bowl of cold water. Stir well to remove dirt and sand, then drain the leeks in a colander. Clean and wash the spring onion. Cut off the green part and slice it into rings, then halve the white part lengthwise and quickly sear it on both sides in heated oil.

Sauté the green part of the spring onion along with the leeks in melted butter. Season with pepper and salt, then remove from heat and let the sautéed vegetables cool.

Preheat the oven to 190°C (375°F). Line a low baking dish (20 x 30 cm) with parchment paper. Roll out the puff pastry into a larger rectangle and place it in the baking dish. The pastry should be large enough to cover the bottom of the dish completely and create a 1.5 cm high edge.

Spread the sautéed vegetables over the pastry. In a bowl, whisk the eggs and cream until smooth. Add grated cheese, salt, and pepper, mix well, and pour over the vegetables. Top with sliced mozzarella and crumbled fresh cheese. Bake the pie in the preheated oven for 30 minutes or until the top is golden brown and baked through. Serve warm or cold.
