Squid in Sauce with Olives and Seasoned Polenta
A delicious meal for two. For moments when we crave something from the sea but dont have much time to prepare lunch. The option to drive to the sea for lunch is also not feasible.

Squid in sauce

2 spoons Oil, olive

500 g Fish, squid

0.25 teaspoons Spices, rosemary, dried

1 handful Olives, green, in brine

Peel the onion and garlic, then finely chop them separately. Rinse the squid and dry them well with paper towels. Cut the bodies into approximately 1 cm wide rings, leaving the tentacles whole.

Heat a deep pan well, then add oil. Add the onion and sauté until translucent.

Add the squid and continue to sauté. The squid will release some liquid, so you can increase the temperature slightly. When the squid starts to color and there is no excess liquid left in the pan, add the garlic and pour in the wine. Continue cooking until the wine is reduced by half.

Add the tomato and water, then season the sauce with salt, pepper, and rosemary. Optionally, add a bit of ground chili. Cover the pan and let the dish simmer gently for 25 minutes, stirring it well several times. Add the sliced olives during the last 10 minutes of cooking.

About 15 minutes before the squid in the sauce is ready, place a smaller pot with water and milk on the stove. Season the liquid well with salt and pepper, and add dried herbs (thyme, rosemary, basil, etc.). For flavor, also add a piece of butter.

When the liquid boils, reduce the heat to medium and slowly pour in the polenta while stirring continuously. Once all the polenta is added, cook it on low heat while stirring constantly for another 2 minutes until it thickens appropriately and the grains soften. Once ready, remove the pot from the heat and let the polenta rest covered for a few minutes.

Serve the squid in sauce alongside the polenta on plates and enjoy the prepared dish immediately.
