Steps

Rinse the squid under running water and dry thoroughly with paper towels. Cut the bodies into 0.5 cm wide rings, leaving the tentacles whole.

Rinse the parsley under running water, shake it dry, and chop it finely. Peel the garlic, mince it, and quickly sauté it in heated olive oil. Add the tomato paste, fry while stirring for 1 to 2 minutes, then pour in the strained tomatoes. Add the olives, squid, and half of the chopped parsley to the sauce. Season with salt, pepper, and chili, and cook over moderate heat for 30 to 60 minutes—until the squid is tender. Add a little water if needed.

Serve the squid in spicy tomato sauce warm or cold. Before serving, drizzle with a little olive oil and sprinkle with the reserved chopped parsley.
