Squid in Tomato Sauce

Ingredients

2 spoons Oil, olive

2 piece Fish, salt, in brine

2 piece Shallot

pieces Garlic, fresh

500 g Fish, squid

0.5 dl Alcohol, Wine, White

400 g Tomato, pieces - can

pieces Rosemary, fresh

Steps

Peel the shallot and garlic, then finely chop them separately. Dry the squid with paper towels and cut them into approximately 1 cm wide rings.

Heat the pan well, then pour in the oil. Add the anchovies and quickly sauté them until they dissolve. Add the shallot and sauté until it becomes translucent.

Add the sliced squid and continue to sauté. The squid will release some liquid, so you can also increase the temperature slightly. When the squid starts to color and there is no more excess liquid in the pan, add the garlic and pour in the wine. Cook further until the wine is reduced by half.

Pour in the tomatoes and season the sauce with salt, pepper, and rosemary. If desired, add a few sprigs of fresh thyme. Cover the pan and let the dish simmer gently for 25 minutes.

Advice
