St. Nicholas Honey Pastry

Ingredients

4 pieces Egg, fresh

100 g Sugar, white

80 ml Milk, whole milk

200 g Honey

280 g Wheat flour, white, multi-purpose

1 teaspoon Spices, cinnamon, ground

100 g chocolate, dark

Chop the chocolate into small pieces with a sharp knife. Sift the flour and baking powder and mix them with ground cinnamon. Prepare two bowls. In one, add the egg yolks and whisk them until frothy with sugar and finely grated orange zest. In the other, add the egg whites and beat them into stiff peaks.

Add milk and honey to the bowl with the whisked egg yolks. Mix well until you get a smooth mixture, then slowly mix in the dry ingredients at low speed. Add the chopped chocolate to the batter, and finally, gently and slowly fold in the beaten egg whites.

Grease a round baking pan (25 cm in diameter) well with butter and dust it with flour (remove any excess flour). Pour the prepared batter into the pan and spread it evenly with a spatula, smoothing the top. Bake in a preheated oven at 160°C for about 40 minutes.

Mix powdered sugar and egg white until smooth to create a thick, paste-like mixture. Divide it into three parts. Color two parts as desired, leaving the third part white. Prepare three decorating bags and fill them with the prepared glazes.

Once the cake has cooled, cut it into 12 pieces and decorate them as desired with the prepared glazes (see picture). Wait for the glaze to set, then serve the prepared pastry on a plate or platter.
