Ingredients

500 g Meat, beef, dried beef

1 piece Egg, egg yolk, fresh

3 pieces Cucumbers, sour

0.5 piece Onion, raw

1 spoon Carp, soaked

1 spoon Mustard

8 pieces Fish, anchovy fillets in oil

Wash the meat and dry it well with kitchen towels. Remove the sinews and fat, then cut it into small pieces and season with salt. Finely chop the gherkins. Clean the anchovies and mash them into a paste with a fork. Wash the capers, drain them, and finely chop them. Peel the onion, wash it, and finely chop it.

Finely chop or grind the meat pieces. In a bowl, mix the gherkins, onion, anchovies, mustard, chili, paprika, salt, and pepper. Add the meat and egg yolk to the mixture and mix everything well.

Shape the steak tartare into a large ball and serve with butter and toasted bread.
