Steak Tartare alla Sara

200 g Meat, beef, fillet - lung roast

1 piece Cucumbers, sour

4 pieces Carp, soaked

1 teaspoon Mustard

2 spoons Mayonnaise

1 piece Chili peppers, red chili, fresh

3 spoons Oil, olive

1 piece Fish, anchovy fillets in oil

1 piece Shallot

pieces Spices, paprika

1 handful Arugula
Thyme oil

1 bouquet Thyme, raw

2 dl Oil, olive

1 pinch Salt, table
Steps

Finely chop the beef fillet, pickled cucumber, capers, and shallot, and add them to a bowl. Mix the ingredients and gradually add mustard, mayonnaise, chopped chili, chopped anchovy, olive oil, salt, and pepper to taste.

Blanch the chives in salted water for 30 seconds, then drain and quickly cool them in cold water to preserve their vibrant color. Drain the cooled chives again and blend them smoothly with olive oil and a pinch of salt. Strain the mixture.

Add a little chive oil to the plate, then place a small mound of arugula in the center. Add the steak tartare and serve the dish with toasted slices of bread.
