Steps

Steak: Cut the beef back into thicker slices - steaks. Season each steak with salt (3 pinches) and pepper (2 pinches). Place the seasoned steaks in a container, pour oil over them, and let them sit for 30 minutes.

Grill the marinated steaks. Cook each side for about 3 minutes or until they are medium rare. Also grill the edges, so the total cooking time for the steaks is 10 - 15 minutes. Once cooked, transfer them to a container and let them rest for 10 minutes.

Sauce: Cut the ginger lengthwise in half and crush the garlic cloves with a knife. Quickly sauté the ingredients in a pan with a tablespoon of oil. Add milk and let it simmer for half an hour.

Mix the egg yolk and gradually pour it into the sauce. Stir and cook until the sauce begins to thicken slowly. Strain the sauce through a fine sieve to make it smooth. Season with salt and pepper.

Vegetable side: Finely chop the onion, dice the parsnip and tomato into small cubes (0.5 cm x 0.5 cm), cut the carrot into sticks (5 cm x 0.5 cm), and finely chop the garlic. Heat 2 tablespoons of olive oil in a hot pan and sauté the onion first. Then add the parsnip, carrot, tomato, and garlic, and sauté for another 5 minutes until the vegetables are slightly browned. Add water and simmer for 10 minutes to blend the flavors. Season the vegetables with pepper and salt.

In a small bowl, mix cornmeal and milk. Gradually add the mixture to the vegetables. Stir constantly and make sure the sauce doesn't become too thick. Cook for another 10 minutes on low heat. At the very end, add finely chopped green onion.

Apple chutney: Peel the apples, core them, and slice them thinly. Quickly sauté them in a hot pan, add a little water, and simmer for 15 minutes until they soften.
