Stewed Apples with Roasted Hazelnuts and Cream
A wonderful dessert that, despite its simple ingredients, is also suitable for special occasions.

Steps

Wash the apples, dry them, and peel them. Remove the stems and cores, then cut them into pieces.

Place a pot on the stove and add water, sugar, and the chopped apples. Cut the vanilla pod in half and scrape out the seeds with the tip of a knife, then add both the seeds and the pod to the pot. Heat over medium heat for a few minutes until the apples soften (be careful not to overcook them so they don’t fall apart). If the apples are very sour, add a bit more sugar if needed. Remove the pot from the heat and let the apples cool.

Spread the hazelnuts in a baking dish in a single layer. Place the dish in the oven preheated to 200°C (392°F) for 10 minutes. Halfway through, shake the dish well to ensure the hazelnuts roast evenly.

Transfer the roasted hazelnuts to a clean kitchen towel. Gently roll them with your hands to remove most of the brown skins. Let the peeled roasted hazelnuts cool.

Heat a pan over medium heat and add sugar. Let the sugar slowly melt, but do not stir while heating to prevent crystallization. Once the melted sugar caramelizes and turns amber in color, add the hazelnuts. Stir with a spatula for 1-2 minutes to coat the hazelnuts well with the caramelized sugar. Transfer the mixture to a baking dish lined with parchment paper and let it cool completely and harden. Grind the caramelized hazelnuts or chop them finely with a knife.

Pour the cooled sweet cream into a bowl and whip it. If desired, add a packet of vanilla sugar.

Prepare the glasses in which you will serve the dessert. First, add a few spoonfuls of the cooked apples, then sprinkle some of the roasted caramelized hazelnuts over them. Add a layer of cream, followed by another layer of apples and hazelnuts. Finally, top with a dollop of whipped cream and sprinkle a few more hazelnuts on top if desired. Serve the dessert immediately or store it in the refrigerator before serving.
