Sticky Pudding
A slightly different pudding than what were used to. Because it will be a real hit with both children and adults, we recommend that you prepare it too!

Ingredients

75 g Date, fresh or dried

90 g Butter, unsalted

50 g Sugar, brown

2 piece Egg, fresh

1 teaspoon Vanilla, extract, natural

140 g Wheat flour, white, multi-purpose

1 teaspoon Baking powder

Steps

Finely chop the dates and place them in a tall cup. Pour 75 ml of water into the cup and bring to a boil. Simmer the dates gently for 4 minutes, allowing them to absorb almost all the water. Then gently blend them with a hand blender and set the cup aside.

Grease four round ceramic molds (for making soufflés) with 15 g of butter. Preheat the oven to 180 °C. Cream the remaining butter with sugar using a hand mixer. Add the eggs and vanilla extract, and mix well. In a separate bowl, sift the flour and baking powder. Gradually (spoon by spoon) mix the flour into the egg-butter mixture.

Once all the ingredients are well combined, add the dates. Divide the mixture into the 4 greased ceramic molds. Place the molds in a deep baking dish. Pour water into the dish until it reaches halfway up the molds. Cover the dish with aluminum foil. Place the dish in the preheated oven for 25 minutes.

Meanwhile, make the sauce. Place a cup on the stove and add half of the cream, butter, and sugar. Heat slowly over moderate heat, stirring constantly until all the sugar dissolves. Then increase the heat to bring the mixture to a boil and let it boil for about 4 minutes. Finally, add the remaining cream, mix well, and remove from heat. Reheat the sauce briefly before using.

When the puddings have risen nicely, remove them from the oven and carefully take the molds out of the baking dish. Let the puddings cool slightly, then invert them onto plates and pour the warmed sauce over them.
