Carefully wash the strawberries, drain them, and dry them with paper towels.

Break the chocolate into pieces and place them in a cup along with the coconut oil. Place a larger pot of water on the stove and bring it to a boil. Place the cup over the pot. Melt the chocolate in the water bath, stirring occasionally to create a smooth liquid glaze.

Hold the strawberries by the stems and dip them halfway into the chocolate. Wait for the excess glaze to drip off, then place them on parchment paper. Once the glaze has cooled, arrange the strawberries on a serving plate and store them in the refrigerator. Serve chilled.
