Strawberry Cheesecake (No-Bake)

Ingredients
Cookie base

200 g Breadcrumbs, dried

125 g Butter, salted

Lightly grease the bottom of a round cake pan (22 cm in diameter) with butter and line it with baking paper. If you have it, place acetate foil around the inner edge of the pan. If not, you can also line the edges with baking paper.

Melt the butter slowly in a saucepan over low heat. Remove from heat and let it cool until lukewarm. Finely grind the biscuits, then mix them with the melted butter. Transfer the mixture to the cake pan. Smooth the top and press it down to create an even base, then refrigerate.

In a bowl, quickly mix the cream cheese, mascarpone, powdered sugar, and grated lemon zest. Be careful not to mix the ingredients for too long, as the cream can become too runny.

Whip the sweet cream for a minute or two, then slowly add the gelatin while mixing. Finally, mix in the vanilla sugar. Gently and slowly fold the whipped cream into the mascarpone cream using a hand whisk.

Pour the cream onto the biscuit base and spread it evenly over the entire surface, smoothing the top. Refrigerate the cake for at least 2 hours.

Clean the strawberries, rinse them quickly under running water if needed, and dry them. Slice them thinly or cut them into pieces, then arrange them in a circular pattern on top of the dessert. Start placing the strawberries from the outer edge and finish in the center.

Prepare the red cake glaze according to the instructions on the package using 250 ml of water, then pour it over the strawberries. Wait for the glaze to set, then refrigerate the cake for a while longer to firm up and set completely.
