1 kg Strawberries

900 g Sugar, white

2 piece Lemon zest, fresh

Thoroughly wash the strawberries and remove the stems and green parts. Place them in a bowl and cover with sugar. Cover the bowl and let the strawberries sit overnight.

Cut the lemons in half and squeeze them well. Place a larger pot with a double bottom on the stove, add the strawberries and sugar. Add the lemon juice and slowly bring to a boil over low heat. Stir constantly until the sugar dissolves.

Cook for another 10-15 minutes until the jam reaches 105 degrees Celsius. Skim off any foam that forms during cooking. Check the thickness by placing a small amount of jam on a well-cooled plate, waiting 3 minutes, then pushing it with your finger. If it wrinkles, it's ready.

Remove the jam from the heat and let it cool for about 10 minutes. Then pour it into preheated sterilized jars. Fill them to the top. Seal tightly while still warm and let the jam cool completely.

At the right moment, serve the strawberry jam to guests as a spread or accompaniment to desserts.
