Ingredients

5 pieces Gelatin powder, unsweetened

350 g Strawberries

3 spoons Powdered sugar

1 piece Lime, fresh

350 g Sweet cream

Soak the gelatin in cold water. Let it sit for 10 minutes to allow the gelatin to swell. Clean and wash the strawberries. Save a few nice strawberries for decoration. Cut the remaining strawberries into smaller pieces, add sugar, and mash everything with a fork. Wash the lime thoroughly under warm water. Dry it with a kitchen towel, then finely grate about one teaspoon of zest. Cut the lime in half and squeeze the juice from both halves.

Dissolve the soaked gelatin in a small cup over low heat. Be careful not to let the gelatin boil! Mix the dissolved gelatin with the strawberry puree, lime zest, and juice. Place the cup with the strawberry puree in the refrigerator to allow the mixture to start setting.

In a bowl, whip the sweet cream with an electric mixer until stiff. Fold the whipped cream into the strawberry puree. Distribute the strawberry cream into glasses and store them in the refrigerator for 3 to 4 hours.

Cut the reserved strawberries in half. Decorate the chilled strawberry mousse with the strawberry halves and serve.
