Ingredients
-
500 g Strawberries
-
150 g Wheat flour, white, multi-purpose
-
150 g Sugar, brown
-
150 g Nuts, almonds
-
2 piece Egg, fresh
-
5 g Yeast, dry
-
170 g Butter, unsalted
-
2 piece Egg, fresh
-
50 g Sugar, brown
-
3.5 dl Sweet cream
-
5 g Powdered sugar
-
0.5 piece Lemon zest, fresh
-
1 teaspoon Alcohol, Rum
Steps
-
Thoroughly clean and wash the wild and garden strawberries. Slice the garden strawberries into thin pieces, then store everything in the refrigerator. Place the almonds in an electric mixer, grind them well, and transfer them to a larger bowl. Add flour, yeast, 150g of softened butter, two eggs, and sugar, then knead into a smooth and firm dough. Place the dough in the refrigerator for two hours.
-
Preheat the oven to 180°C. Meanwhile, whisk the egg yolks until frothy and add both types of sugar, sweet cream, finely grated lemon zest, and a teaspoon of rum. Beat with an electric mixer on medium speed for about seven minutes. Roll out the rested dough on a floured work surface to about four millimeters thick, then use it to line the bottom of a greased baking dish. Prick the dough several times with a fork and pour the prepared cream over it. Bake in the preheated oven for 40 minutes.
-
Allow the baked dough to cool completely, then top it with slices of garden strawberries and sprinkle the center with wild strawberries, which promise a sweeter taste.
