Strawberry Pie with Lattice
When strawberries ripen, a thousand and one recipes come to mind on how to use this wonderful treasure from the garden. I usually always opt for simple, old recipes that I know I cant go wrong with. Sometimes I might add something inspired by the moment, but the basic recipe remains unchanged. This time I prepared a strawberry pie, adding baking powder to the dough and a hint of mint to the strawberries to further enhance their natural sweetness.

Ingredients
Dough

300 g Flour, Whole wheat

100 g Sugar, white

1 bag Sugar, white

1 pinch Salt, table

200 g Butter, unsalted

2 piece Egg, fresh

500 g Strawberries

Steps

Place flour, sugar, vanilla sugar, salt, and diced butter into a food processor and mix until crumbs form. Add the eggs and mix until all ingredients come together into a dough, which we quickly knead by hand. Shape the dough into a ball, wrap it in plastic wrap, and let it rest in a cool place (not the refrigerator) for at least half an hour.

While the dough is resting, clean and wash the strawberries. Dice them, then add regular and vanilla sugar, along with finely chopped mint. Gently mix the strawberries. If you feel the strawberries have released too much juice, you can add a tablespoon of cornstarch or drain the juice.

Roll out the chilled dough to about 3 mm thickness. Carefully place it into a 22 cm round pie dish. Flatten the edges and prick the bottom with a fork. Place the dish with the dough into an oven preheated to 180°C and bake the empty dough base for 15 minutes. There's no need to weigh it down with baking beads (dry beans, rice).

Quickly knead the excess dough and roll it out again to 3 mm thickness.

After 15 minutes of baking, remove the dish from the oven and fill the still-hot base with the strawberry filling.

Cut the rolled-out dough into 1 cm thick strips using a pizza cutter and arrange them in a lattice pattern over the strawberry filling. If you're not skilled at forming a lattice, you can shape the excess dough into a ball and freeze it for a few minutes, then grate it over the filling. The taste will be the same.

Once you've formed a nice lattice or covered the strawberries with grated dough, return the dish to the oven. Lower the temperature to 170°C and bake the pie for another 35 to 40 minutes.

Let the baked pie cool, then carefully remove it from the dish and cut it into desired pieces. Garnish with mint leaves. Serve with whipped cream and/or a scoop of ice cream.
