Stuffed Baked Potatoes with Mushrooms
Slovenians are big fans of potatoes. We prepare various dishes from them. A dish that will surely delight you is baked stuffed potatoes. This time we will stuff them with mushrooms.

Ingredients

4 pieces Potatoes, white

1.5 teaspoons Oil, vegetable oil, canola

200 g Mushrooms, mushrooms, fresh

4 twig Thyme, fresh

2 pod Garlic, fresh

50 g Meat, pork, smoked bacon

4 spoon Sour cream

140 g Cheese, edamame

0.5 teaspoons Salt, table

2 pinch Spices, pepper, black

Preheat the oven to 190 degrees Celsius. Thoroughly wash the potatoes under running water and scrub them if necessary. Pierce the skin several times with a fork, then rub the skin with salt. Arrange the potatoes in a smaller baking dish lined with baking paper. Place the dish in the preheated oven for 60 minutes.

Clean the mushrooms with a damp cloth (if necessary, quickly rinse them under running water). Finely chop the cleaned mushrooms. Peel and finely chop the garlic. Rinse and dry the thyme sprigs. Remove the leaves from the sprigs. Cut the bacon into smaller pieces. Heat oil in a pan and fry the bacon and mushrooms while stirring. At the end, add the thyme and garlic and fry everything together for about 1 more minute. Remove the pan from the heat and let the fried mixture cool.

Take the baking dish out of the oven and let the potatoes cool slightly. Then, cut a thin slice off the top of each potato and scoop out the inside with a spoon, leaving about a 1 cm thick wall. Mash the scooped-out potatoes in a bowl with the cream. Then mix them with the fried mixture and 2/3 of the grated cheese. Season with pepper and salt to taste. Fill the hollowed-out potatoes with the stuffing.

Place the stuffed potatoes back in the baking dish. Sprinkle the remaining cheese on top and return the dish to the preheated oven for about 15 minutes.

When the dish is ready, serve it on plates and accompany it with a large bowl of seasonal salad.
