Stuffed Chicken Breasts (with Herbed Mascarpone Filling)

700 g Meat, chicken, breasts

4 slice Meat, pork, smoked bacon

Steps

Preheat the oven to 200 degrees Celsius. Peel and finely chop the garlic. In a bowl, mix the mascarpone, garlic, lemon zest, rosemary, salt, and pepper.

Rinse the chicken breast halves under running water and dry them well with paper towels. Make a deep incision in each half with a knife to create a pocket, which you then fill with the prepared mascarpone mixture.

Wrap the stuffed chicken breasts tightly with slices of prosciutto to prevent the filling from leaking during baking. Heat oil in a pan and sear the chicken breast halves on both sides.

Transfer the seared chicken breasts to a baking dish and place it in the preheated oven for 15 to 20 minutes.

Remove the baking dish from the oven, transfer the chicken breasts to a plate, and keep them warm. Pour lemon juice into the baking dish and place it on the stove. Bring to a boil over medium heat. Use a spatula to scrape the bottom well to release all the caramelized bits left from baking.

Serve the chicken breasts on plates, pour the sauce over them, and serve with your chosen side dish.
