Stuffed Easter Eggs (Colored with Beet Juice)
Preparing stuffed eggs is no art, and this recipe doesnt require any special culinary skills. To make the eggs truly special and eye-catching on a richly decorated holiday table, beet juice is used, in which hard-boiled eggs are soaked for a few hours.

Ingredients

3 spoons Mayonnaise

1 teaspoon Mustard

1 pinch Spices, pepper, red or cayenne

6 pieces Egg, hard-boiled

1 piece Peach, fresh

2.5 cups Water

1 cup Vinegar, red wine

Steps

Wash the beets, peel them, and slice them. Add the sliced beets, water, vinegar, and salt to a medium-sized pot. Bring to a boil, then reduce the heat to low and simmer for 20 minutes. Remove from heat and let cool.

Once the cooked beets have completely cooled, strain them through a fine sieve. You can pour the juice back into a pitcher or into a bowl. Carefully peel the eggs and add them to the beet juice. It's important that all the eggs are fully submerged in the liquid. Let them sit for 1 hour to color the eggs (you can leave them longer; the longer they stay in the beet juice, the more the egg whites will be colored).

Remove the eggs from the juice and let them dry. Then cut them in half lengthwise and remove the yolks, adding them to a bowl and mashing them with a fork.

Add mayonnaise, mustard, and seasonings to the mashed yolks. Mix well until you have a smooth filling, which you can then pipe into a decorating bag with a star tip and fill the colored egg white halves. Decorate the eggs with fresh herbs or edible flowers if desired.

Advice
The fresher the eggs, the harder they will be to peel. In the case of fresh eggs, you can add a teaspoon of baking soda to the water in which you boil them.
