Stuffed Potato Balls
A great idea for a snack or side dish. These seemingly ordinary potato balls hide a delicious surprise inside. They were invented by Peruvians, who call them papa rellena.

Ingredients

450 g Meat, beef, side

80 ml Tomato sauce, without salt

Steps

Prepare mashed potatoes according to the mashed potato recipe. Crack the eggs into a bowl and beat them well. In a bowl, mix the hot mashed potatoes, eggs, butter, and 2 tablespoons of cornstarch. Set aside and wait for the dough to cool.

Peel the garlic and cut it into pieces. Heat oil in a pan. Add the ground meat to the pan and fry it while stirring until it breaks into pieces and browns.

Mix in the tomato, garlic, oregano, and salt with the meat. Stir well, reduce the heat, cover, and cook for 20 minutes. Remove the pan from the heat and wait for the meat to cool.

Scoop the mashed potato dough with a spoon and spread it on your left palm. Work with wet hands. Make a hollow in the center of the dough and place the meat filling inside. Add another layer of mashed potato on top of the filling with a spoon and shape it into a ball, ensuring the meat filling is in the center. Lightly dust the shaped ball with the remaining cornstarch. Repeat the process until you run out of ingredients.

Heat oil for frying in a deep pan. The layer of oil should be deep enough for the balls to float in it. Gradually fry the balls in the hot oil. Fry the balls for 2 minutes. Place the fried balls on a plate lined with paper towels to drain excess fat.

Arrange the drained balls on a serving plate and serve.

Advice
The oil for frying is just right when bubbles start to form around the handle of a wooden spoon dipped into it. For frying, use fats that do not contain water, such as coconut fat or good quality oil. For a spicier flavor, you can add chopped chili to the meat filling.
