Stuffed Sweet Potato
First, bake the sweet potatoes, then stuff them with a delicious filling made from feta, olives, sun-dried tomatoes, olive oil, and oregano. This dish is an excellent side for fish dishes, but it can also be enjoyed as a standalone meal with a large bowl of seasonal salad.

First, thoroughly wash the sweet potatoes and scrub them if necessary. Dry the tubers, then pierce them in several places with a fork. Place them on a rack and bake in an oven preheated to 220 degrees Celsius for 40 to 45 minutes (baking time depends on the size of the tubers).

While the sweet potatoes are baking, prepare the filling. Dice the feta, olives, and sun-dried tomatoes, then mix them with olive oil and oregano.

Once the sweet potatoes are baked, carefully cut them almost halfway through and stuff them with the prepared filling. Drizzle the sweet potatoes with additional olive oil and garnish with fresh parsley and pepper.
