Stuffed Tomatoes with Ground Meat
When tomato season is at its peak, we should enjoy them to the fullest, as later tomatoes are of lower quality and mostly tasteless. If youre already tired of tomato sauces and soups, try this excellent dish that you can serve as a warm or cold appetizer, and with a suitable side dish, it will be more than a great meal.

8 pieces Tomato, red

1.5 spoons Oil, olive

1 piece Bell pepper, red, fresh

150 g Meat, chicken, ground

50 g Breadcrumbs, dried

50 g Cheese, feta

4 twig Parsley, fresh
Steps

Thoroughly wash the tomatoes and dry them completely. With a sharp knife, cut off the tops and scoop out the seeds with a coffee spoon. Be careful not to damage the skin. Save the liquid and discard the seeds. Cut the tomatoes flat on the bottom so they can stand easier. Place the tomatoes on a paper towel to drain. The cut part of the tomatoes should be facing down!

Clean and wash the young onion. Finely chop the white part, and save the green part for later. Wash the bell pepper, clean it (remove the stem and seeds), and cut it into small pieces.

Heat olive oil in a pan, and while stirring, sauté the ground meat, bell pepper, and chopped onion. When the meat is evenly browned, remove the pan from the heat and let the contents cool.

Rinse the parsley sprigs under running water, shake them well, and finely chop them. Cut the green part of the young onion into thin rings. In a bowl, add the sautéed meat with vegetables, the green part of the young onion, parsley, breadcrumbs, and the saved tomato liquid. Crumble feta cheese into the bowl and mix all the ingredients well. Taste the filling and season with pepper and salt as desired.

Preheat the oven to 180 degrees Celsius. Line a baking dish with parchment paper. Fill the tomatoes with the prepared mixture and place them in the prepared baking dish. Cover the tomatoes with the cut-off tops and place the baking dish in the preheated oven for about 15 minutes.

When the filling turns golden brown on top, remove the baking dish with the tomatoes from the oven. Serve the tomatoes on plates and accompany them with the chosen side dish.
