Stuffed Zucchini in Tomato Sauce
Halved zucchinis are filled with a meat mixture, sprinkled with cheese, topped with tomato sauce, and baked in a preheated oven. Stuffed zucchinis are a great idea for a delicious summer lunch, perfectly paired with mashed potatoes.

4 pieces Small pumpkins

450 g Meat, beef, side

300 g Carniolan sausage

1 piece Onion, raw

0.5 cups Breadcrumbs, dried

1 cup Tomato sauce, without salt

100 g Cheese, edamame

Steps

Preheat the oven to 180°C. Grease a baking dish.

Wash the zucchinis, cut them in half lengthwise, and carefully scoop out the flesh with a spoon. Be careful not to damage the skin. Reserve about 3/4 of the scooped-out flesh and chop it finely. Peel and finely chop the onion.

In a bowl, mix together the meat, peeled sausage, onion, chopped zucchini, breadcrumbs, and egg. Season with salt and pepper to taste. Knead the mixture well with clean hands. Fill the zucchini halves with the mixture, sprinkle with cheese, and place them in the greased baking dish.

In a bowl, mix the tomato, tomato sauce, and water, then pour the mixture over the stuffed zucchinis. Bake the zucchinis in the preheated oven for 45 minutes.

Wash, shake dry, and chop the parsley. Serve the baked stuffed zucchinis on plates, drizzle with the sauce from the baking dish, sprinkle with parsley, and serve. Mashed potatoes make an excellent side dish.
