Styrian Apple Pie
A tested recipe for a pie made from shortcrust pastry with baking powder and grated apples.

Ingredients
Dough

600 g Flour, Whole wheat

0.5 bags Baking powder

200 g Butter, unsalted

50 g Sugar, white

1 pinch Salt, table

2.5 dl Milk, whole milk
Filling

1.5 kg Apple, fresh

4 spoon Juice, lemon

1 teaspoon Lemon zest, fresh

125 g Sugar, brown

1 teaspoon Spices, cinnamon, ground

100 g Raisins

100 g Nuts, hazelnuts

200 g Marmalade, orange

50 g Powdered sugar
Steps

Sift the flour together with the baking powder into a bowl. Add the butter cut into pieces, sugar, salt, and milk. Knead the dough with your hands or a mixer and shape it into a ball. Place the dough in a bowl, cover it, and refrigerate for one hour.

Sort and wash the raisins. Wash the apples, peel them, remove the cores, and grate them. In a bowl, mix them with lemon juice, grated lemon zest, sugar, cinnamon, raisins, and hazelnuts.

Preheat the oven to 200°C. Roll out the dough on a floured surface to about half a centimeter thick. Use two-thirds of the dough to line the bottom and sides of a low baking dish. Place the apples on the dough, spread them evenly, and smooth them out. Cut the remaining dough into strips and create a lattice pattern on top of the pie.

Bake the pie in the preheated oven, in the middle rack, for 30 minutes. Mix the apricot jam with 0.5 dl of water in a small pot, place it on the stove, and heat it up.

Remove the baked pie from the oven. Brush it with the hot apricot jam. Wait until it cools completely, then dust it with powdered sugar, cut it into slices, and serve.

Advice
When grating the lemon, be careful to only grate the yellow part, as the white part has a bitter taste. Its best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax, which contains toxins.
