Styrian Sour Soup
A traditional Styrian dish made from leftover meat. So, if you have various meat scraps in your fridge that you dont know what to do with, this is a great opportunity to use them up in a tasty way.

Ingredients

500 g Meat, pork, loaf

4 pieces Potatoes, white

2 piece Spices, bay (leaves)

2 piece Onion, raw

3 spoons Wheat flour, white, multi-purpose

3 pods Garlic, fresh

1 dl Alcohol, Wine, Red

3 spoons Tomato sauce, without salt

0.5 cups Sour cream

1 teaspoon Salt, table

5 grain Spices, pepper, black

1 spoon Parsley, fresh
Steps

Cut the meat into smaller pieces, place them in a pot, and pour a liter of water over them. Add a pinch of salt, bay leaves, and a clove of garlic. Peel the potatoes, cut them into cubes, and wash them. Add them to the pot with the meat and cook everything together over moderate heat for about 15 minutes.

Peel and chop the onion and the remaining garlic. In a larger pot, heat oil and sauté the chopped onion until translucent. Sprinkle with flour and stir. Once the flour takes on color, add the garlic and deglaze with wine. Add the contents from the first pot to the larger pot and mix well. Remove the garlic clove.

Stir in tomato paste and sour cream into the soup at the end. Season with salt and pepper to taste. Cook the soup for another 10 minutes and add chopped parsley towards the end.

Serve the soup in bowls and accompany it with homemade bread.

Advice
Instead of wine, you can use a tablespoon of vinegar. Instead of pork, you can also use chicken, beef …, whatever you have left. Nutmeg and thyme also pair excellently with soups made from beef leftovers. If you decide to use these spices, add half a teaspoon of nutmeg or half a teaspoon of thyme.
