Ingredients

250 ml Milk, whole milk

250 ml Sweet cream, partially skimmed

0.5 cups Cocoa, powdered, unsweetened

1 piece Vanilla, extract, natural

2 piece Egg, egg yolk, fresh

Pour the milk into a saucepan and slowly heat it, making sure it doesn't boil. Add the vanilla pod to the milk and let it simmer on low heat for 20 minutes without boiling.

In a bowl, whisk the egg yolks until frothy. Remove the vanilla pod from the milk, cut it in half with a knife, and scrape out the seeds with the tip of the knife. Return the seeds to the milk. Let the milk cool, strain it if desired, then slowly pour it into the egg yolks, mix well, and pour everything back into the saucepan. Add cocoa and cook on low heat until the mixture thickens—make sure it doesn't boil again! When a thick foam forms on the spoon while stirring, it's time to remove the saucepan from the heat. Let the mixture cool completely, then stir in the cream. Pour the entire mixture into the ice cream maker and follow the manufacturer's instructions.

Transfer the prepared ice cream from the machine's container into a lidded container (or containers) and freeze the ice cream in the freezer.

Advice
If you dont have an ice cream maker, place the mixture in the freezer just long enough for it to slightly thicken but not freeze. Its best to use flat metal containers, as they conduct heat the best. Store the ice cream in the freezer in well-sealed containers to prevent it from absorbing other odors. Fill the ice cream makers container only up to two-thirds, as the mixture will expand during freezing. The mixing time in the machine depends on the quantity, additives, and temperature of the mixture. If the ice cream has been in the freezer for more than 12 hours, let it sit in the refrigerator for 30-60 minutes before serving.
